CHIMICHURRI INSPIRED GREEN SAUCE
This green sauce is chimichurri inspired. I was determined to have a green sauce to go with my Portobello Steaks. Mama Paige helped me find the best combination. Who doesn’t love a little green sauce over their steak for that extra punch of flavor? Even better, we used herbs that were already sitting in the fridge leftover from other recipes.
I always buy way too many herbs and green onions. I need one or two stems for a recipe, and the rest tends to go to waste. This recipe is a great way to make use of the remaining herbs in a delicious way. It can be used as a sauce or a marinade.
This is not your classic chimichurri sauce. Again, we pulled whatever was in the fridge and green to make this recipe. It’s not authentic, but it’s delicious. This green sauce works well with portobello steaks and, surprisingly, over pasta.
Ready to make the sauce? To begin, rinse the herbs. Finely chop the herbs and dice the garlic. Add everything into a small bowl with olive oil and white wine vinegar. Mix well. Now, it’s ready to go.

Chimichurri Inspired Green Sauce
Ingredients
- ¾ C. fresh parsley – finely chopped
- ¼ C. green onion – finely chopped
- 1 Tbsp mint leaves – finely chopped
- 1 Tbsp dried oregano
- 3 cloves garlic - diced
- ⅔ C. olive oil
- 1 Tbsp white wine vinegar

- Whisk all the ingredients together & serve
