AVOCADO TOAST WITH EVERYTHING SEASONING

Avocado toast is another one of my favorite go-to breakfast items. It’s easy to make, healthy, and pretty darn good. I know avocados can be a sore topic for those who don’t like them. No worries here. Despite the name, the star in this recipe is not the avocados. Instead of smashing the avocados over the toast, I am laying them across a bed of bacon-flavored cashew spread. Healthy fats, protein, and bacon awesomeness all in one plant-based spread. 

Still not a fan of the avocados accompanying the spread? Feel free to swap them out for your favorite veggies. When I don’t have avocados on hand, I add cucumbers, green bell pepper, or red bell peppers. They add an extra crunch to the toast that you don’t get with avocados.

Bacon Spread & Healthy FATS

I touched on the benefits of cashews in the Cheezy Scallop Potatoes post. So instead of repeating how awesome cashews are, let’s expend it to how awesome healthy fats are in general. Healthy fats are so important to the function of your body. According to Heart.com, “Dietary fats are essential to give your body energy and to support cell growth. They also help protect your organs and help keep your body warm.” This avocado toast packs a triple punch of healthy fats – cashews, olive oil, and avocados – making it the perfect breakfast to incorporate into your winter meal rotation. 

 

Let’s get into the Recipe!

This is an easy recipe, but you will need to start the night before. In a medium container, soak a cup of roasted and salted cashews in two cups of water overnight. Yes, you need the salted and roasted cashews for this recipe. The flavor the cashews get from roasting enhances the bacon marinade flavor in the spread.  

Once the cashews are done soaking, blend with bacon marinade, a little bit of soaking water, garlic, black pepper, and salt until smooth. Set the spread aside while making the everything seasoning. Making the everything seasoning is my favorite part of this recipe. It makes the kitchen smell so good. In a small skillet, toast the ingredients for everything seasonings. Once you smell the fennel, it is done.  

Now, let’s assemble. Toast the bread to your liking. I like to dry toast bread in the same skillet I toasted the everything seasoning in. It just makes the bread taste that much better. Spread a layer of cashew bacon spread. Thinly slice avocados and tomatoes. Add slices on top of the spread. Then sprinkle with everything seasoning. 

If you have leftover everything seasoning, store it in an airtight container in a cool, dry place. Trust me; you will want to add it to everything after making this toast.

A little twist on a breakfast staple. This avocado toast is layered with vegan bacon spread, avocado, tomato, and everything seasoning. Just a little extra magic.

Ingredients

Cashew Bacon Spread
  • 1 C. roasted and salted cashews
  • 2 C. water
  • 6 Tbsp bacon marinade (link)
  • 3 Tablespoon of cashew soaking water
  • 1 Tsp ground garlic
  • 1 Tsp ground black pepper
  • Pinch of salt
Everything Seasoning
  • 2 Tbsp sesame seeds
  • 2 Tbsp garlic flakes
  • 1 Tbsp poppy seeds
  • 1 Tbsp fennel seeds
  • 1 Tbsp flaked Salt
Toast & Garnish
  • 8 slices of toast
  • Avocado slices to taste
  • Tomato slices to taste

Instructions

  1. Blend cashews, bacon marinade, 3 tablespoons of soaking water, garlic, black pepper, and salt until smooth. Set aside.
  2. In a small skillet, toast sesame seeds, garlic flakes, poppy seeds, fennel seeds, and flaked salt lightly for 2-3 minutes. You will smell the fennel when it is done. Pour in an airtight container and set aside.
  3. Toast bread. Spread cashew mixture over toast slices. Slice avocados and tomatoes and add to toast. Then, sprinkle everything seasoning on top.
