RECREATING: THE TRIPLE DOUBLE SANDWICH

Happy New Year! I thought I would kick off the year with a post Restaurant Recreation inspired by one of my favorite places in Texas, Spiral Diner. You might take a look at the picture wondering – is that faux meat & cheese? Yes and Yes! In keeping with the vision of  PlantBasedSlay, we don’t typically (ever) highlight recipes featuring faux meat and cheeses. But, I pulled the Mama card and AP agreed to share this one post, because ….well, it’s just too good not to share! You can thank me later!

Now that we got that out of the way, let’s talk a little bit about the diner before we get into slaying this Triple Double recreation.

ABOUT SPIRAL DINER

In 2002, Amy McNutt decided to open Spiral Diner, a vegan restaurant with food too delicious to pass up. According to the Spiral Diner website, Amy thought that if people could see that vegan food was delicious, they would not have an excuse to not try it. I am glad that she gave it a try! The Spiral Diner has not only survived but flourished – growing from a small lunch counter to a multi-location eatery. From breakfasts to burgers to desserts, the menu is pure comfort food and the atmosphere is casual and friendly. 

On my last visit, my sister and I were eager to get back to Spiral Diner. We were on the hunt for the VLT (vegan bacon, lettuce and tomato sandwich) and Patty Melt (your choice of patty, melted vegan cheese and crispy French-fried onions on grilled Texas bread), but then we saw the Triple Double aka the Dugan Nash. Our eyes grew wider and smiles grew bigger as we read the burger description:

“The sandwich that America needs. Two of our classic patties, special sauce, lettuce, pickles and French fried onions, but with grilled cheese sandwiches instead of the bun. That’s right, a big ass burger made with three grilled cheese sandwiches. The burger is perfect for sharing amongst friends, or just enough to appease one single heroic appetite.”

 
 
 

Recreating the Triple Double

You can see why I (or AP) couldn’t pass up sharing this recreation. Ready to slay this recreation? Here is how I recreated Spiral Diner’s Triple Double at home: 

  • Patties: Two plant-based burger patties, grilled to perfection. Follow the package directions or make your own burger. 

  • “Buns”: Three grilled cheese sandwiches. I used my favorite packaged cheddar-like sliced plant-based cheese. 

  • Special sauce: There wasn’t a recipe for the Spiral Diner’s special sauce, so I had to guess. I made up a mixture of two parts vegan mayo, one part pepper jam and one part BBQ sauce. Feel free to tweak based on your preference. 

  • The Fixings: I used grilled onion, romaine lettuce and bread and butter pickles.

Now that you have the ingredients down, it’s time to assemble the sandwich. Start with a grilled cheese sandwich as a base, then a patty, top with special sauce and fixings and repeat. Top with the last grilled cheese. 

You might be thinking – ok, I have it assembled but how do I eat it? Very carefully, lol. I cut the sandwich into quarters so I can enjoy every single bite. 

Another Note

If you are like AP and don’t partake in faux meats and cheese often, here are a few substitutions: 

  • Patties: Swap the faux meat patties for black bean patties or roasted portabella mushrooms.

  • Cheese, please: Swap the faux cheese slice for an extra thick layer of Epic Queso or create your own DIY sliceable cheese!
