GAME DAY SLIDERS

 
 

I could not wait to share these Game Day Sliders with you. What’s with the name? Well, these sliders are handheld treats packed with flavor and ridiculously easy to make. It’s a win-win for any gathering, but especially on game day! 

The Game Day Sliders are a plant-based alternative to blackened fish sandwiches topped with a jalapeno cilantro slaw. I told you these are packed with flavor. Even better this recipe can be made in under 15 minutes! So, if you are looking for a last-minute vegan snack for Super Bowl that will wow your guests, this is the recipe you need!

The recipe

This is going to be a short one, and the hardest part is creating the spice mix. Add two teaspoons of smoked paprika, one teaspoon of onion powder, one teaspoon of garlic powder, one teaspoon of dried oregano, one teaspoon of salt, one teaspoon of black pepper, a half teaspoon of cayenne pepper, a half teaspoon of dried thyme, a half teaspoon of dried basil, a half teaspoon of chili powder and one teaspoon of nutritional yeast to a medium bowl. Mix well to make sure all the ingredients are incorporated. Set mix aside.

Cut hearts of palm in thirds and smash them flat. It will look like a little fillet. Toss each filet in the spice mix. Lay fillets on a parchment-lined baking sheet or air fryer basket. Spray with cooking oil and air fry for 7 minutes at 400° F. If you don’t have an air fryer, bake fillets in the oven for 10-12 minutes at 395° F.  

While the hearts of palm fillets are cooking, get started on the slaw. Add a cup of cabbage slaw mix to a small bowl with two tablespoons of vegan mayonnaise and a tablespoon of pickled jalapeno juice followed by salt and pepper to taste. Mix well. Set aside until the fillets are ready.

To assemble, split the slide bun in half and place a fillet on the bottom half of the bun.  Layer a pile of slaw followed by another fillet. Place the top bun atop the filet and you are ready to serve!

COOKING TIPS

Here are a few things to keep in mind when you are creating this recipe: 

  1. Don’t skimp on the spice: Reading the list of spices can feel like a lot, but don’t skimp on the spices. Each spice, including the seemingly random nutritional yeast addition, provides a balance of flavor in the slider and helps mask the pickled flavor of the hearts of palm fillets. 

  2. Don’t let plant-based slider rolls scare you: Chances are you already have plant-based bread in your pantry. Most grocery store breads are vegetarian and even vegan. Take a look at the ingredient list, you might be surprised to find that your bread is dairy-free and accidentally vegan.  

  3. Refrigerate, don’t freeze: The ingredients do well in the fridge but I am not sure how they will do in the freezer. So, fair warning – Although it may be tempting, I would not recommend freezing these delectable sliders for later. They should keep in the fridge, deconstructed, for up to 3 days.

Don’t forget these Blackened Hearts of Palm sliders to your Super Bowl snack menu. These vegan sliders are small but pack a mighty flavor punch! Even better, you can make this plant-based recipe in under 15 minutes!

Ingredients

Hearts of Palm Fillets
  • 2 tsp smoked paprika

  • 1 tsp garlic powder

Slaw
