GREEN HUMMUS WITH HOMEMADE PITA CHIPS

Hummus? You knew it was coming. I feel like hummus is a plant-based staple. It’s quick, easy, and so customizable. While I’ve tried many hummus recipes, this one is my favorite because it’s an “empty your fridge” type of recipe. It even has some protein and nutrients. Imagine that – a plant-based recipe with protein and nutrients! Lol

This Green Hummus is probably the most basic recipe I will make and share with you. So, why am I sharing it? It one of my go-to snacks, spreads, and even a meal on those “I know I need to eat something but don’t feel like cooking” days.

Protein & Nutrients, you say?  

According to EatThis.com, Chickpeas and Cannellini beans are high in protein with a little over 6g of protein per ½ cup. Making this 2- bean recipe packed with about 23.5g of protein just in this one dip! You don’t have to eat it in one seating. It’s quite a bit of dip. Half of a cup of this will get you 6g of protein. 

 Ok, we know there is protein, but what else? Try Vitamin C! Green bell peppers, fresh spinach, green onion, and jalapenos are all noted for their vitamin C. This amazing vitamin helps with the formation of collagen and boosts your immunity. Not only is this green hummus delicious and packed with protein, but it’ll also help you keep that youthful glow. 

Let’s get into the Recipe!

Ok…seriously, this recipe is simple. Throw spinach, green pepper, green onion, jalapeno, beans, tahini, olive oil, garlic, and salt into the blender. Blend until smooth. Put into your favorite container and let chill in the fridge. Once chilled, garnish with red onion and drizzle olive oil on top. Serve with veggies or pita chips. You can also use this as a spread on a hummus wrap…so good.

For a bonus, make your own pita chips! Cut pita loaves in half and then in fourth to make chips sized pieces. Arrange pieces in a single layer on a cookie sheet. Generously drizzle olive oil and sprinkle garlic salt, pepper, and dried herbs across all the pieces. Toss the pieces on the cookie sheet. You want to make sure oil and seasoning are on both sides of each piece. Rearrange the pieces back into a single layer and bake. You will have fresh, delicious pita chips in 10 minutes or less.

Easy hummus recipe packed with protein and vitamin C. This green hummus is delicious and quick to make. Make it extra special with a side of homemade pita chips.

Ingredients

Green Hummus
  • 1 Jalapeno
  • 1 C. fresh Spinach
  • 2 green onion stalks – ends cut off
  • 1 Green Pepper
  • 2 Tb garlic - minced
  • 1 can of cannellini beans – 15.5 oz drained
  • 2 can chickpeas (or garbanzo beans) – 15.5 oz ea, one drained, one not drained
  • 3 Tbs Tahini
  • 2 Tbs olive oil
  • ½ Tsp salt
  • 2 Tbs lemon juice
Homemade Pita Chips
  • 6 pita loaves – cut down the middle and into fourths
  • Olive oil
  • ½ - 1 Tbs garlic salt
  • ½ - 1 Tbs pepper
  • ½ - 1 Tbs dried oregano
  • ½ - 1 Tbs dried parsley
  • 1 – 2 Tsp za’tar

Instructions

Green Hummus
  1. Put all the ingredients into a blender and blend until smooth.
  2. Chill in the fridge for a few minutes.
Homemade Pita Chips
  1. Pull apart pita pieces and lay in a single layer on a cookie sheet
  2. Drizzle olive oil and half the amount of each seasoning across pita pieces. Toss on the cookie sheet.
  3. Bake for 3 -5 minutes on one side. Flip and back for another 305 minutes.
  4. Add more seasonings to taste.
